Ideal wrapped in Parma Ham and oven baked, pan fried or BBQ'd.
A lovely meaty fish and really holds up in a curry, also the texture lends itself to take the flavour of many Indian spices. Why not put cubes of salmon and monk on a skewer with some peppers for a summer BBQ treat?
